In baseball, I hear announcers talk about the sinker ball and the split finger fastball. What is the difference between these two pitches?

I would consider them both types of fastballs, so to speak. I would say that a sinker is a fastball that gradually moves downward. A splitter is more like a breaking pitch in that a good one “falls off the table” at the end. I hope this makes sense.
