If the batter stays in batters box and catcher tries to throw to 3rd base, is the batter interfering with the catcher?

The batter has the right to the batters box. Obviously, he cannot intentionally try to hinder the catcher if he attempts to throw to third base, but if he is simply in the box and acting as a normal hitter, he is fine.

If the batter falls out of the box on his swing or steps out of the box after swing and interferes with the throw, then it is batter’s interference.
NOTE: For there to be interference called, the catcher must make a throw. No throw, no interference.
